Hummus is so easy to make, and so good for you too! I developed this hummus recipe because I wanted something with a kick! I also wanted to use up some lk’eft over giardiniera that I had in the fridge. I used jalapeños and roasted red peppers from jars, but you can use fresh if you are so inclined.
2 cans of garbanzo beans
2 cloves garlic
3 slices of roasted red peppers from jar
3 giardiniera peppers
5 or 6 slices of pickled jalapeño peppers
2 Tablespoons of horse radish
2 Tablespoon of horse radish sauce
2 Tablespoons tahini paste
Juice of 1 lemon
¼ cup olive oil (I use light olive oil)
¼ teaspoon red pepper flakes (a few shakes)
Salt & pepper to taste
I used a ninja blender to mix my hummus, but any food processor or blender will work. Place all ingredients (except olive oil) into the blender and pulse till mixed. Start slowly adding about ¼ cup of olive oil into the blender while continuously blending. Blend all ingredients till the hummus has the texture you like.
Tip: If you don’t have any tahini paste try using a little peanut butter instead to add that nutty flavor
